Or, from your existing HR or financial aid or other systems, you can print completed documents to PDF.

SearchExpress reads the PDF file, and adds a signature field to each document.

SearchExpress writes the documents to the iPad.

A person uses their finger to sign their signature on the iPad, using an inexpensive iPad App.

You can take a photo or short video of the person signing, if needed.
